Specific objectives:
1. To ensure that attendees have the appropriate scientific and technical knowledge in:
a) Knowledge of the various facilities and machines in terms of its features, operation, maintenance, cleaning mode, type in the market and hygiene implications and additional costs related to energy use, improper maintenance or cleaning.
b) Knowledge concerning the design and space planning and circuits inside a kitchen.
c) Knowledge of legal requirements required by establishments in this sector.
